REVIEW L-Ascorbic acid 6-stearate is the stearate ester of L-ascorbic acid and as well as source of vitamin C, it is used as an antioxidant food additive in margarine (E number E305). The USDA limits its use to 0.02% individually or in conjunction with other antioxidants. L-Ascorbic acid 6-stearate has also been used in the preparation of nanoparticles for drug delivery and the food industry.
